I looked back at the documentation (https://docs.servicerocket.com/display/CCSFJIRA/Configuring+Email+Notifications+to+Notify+Jira+Users) and I realize now that this appears to be a feature-issue - not a misconfiguration issue.
Specifically, the issue is that the connector does not utilize the notification scheme so it will never properly adhere to how my teams need/requested that notifications be received.
So, I think this is turning into a change request...can notification schemes be leveraged to fire generic events (or custom events?) instead of using a custom-connector configuration (so that project roles can be leveraged in notifications on a project-by-project basis)?
